Learning to adjust.

This whole gluten-free thing is a BIG adjustment for me and there are some things I just don't know how to "handle" yet. For instance, yesterday, when I'd spent the night/morning throwing up, the only way I knew how to get my tummy to feel better (and, ahem, get the damn alcohol out of my system) was to eat crackers. Buttloads of crackers. And, no, they weren't gluten-free. So, yes, I can feel the difference in my stomach today. (However, my husband is now extremely sick with stomach problems. He's so sick that he's called into work. The last time he did that, he was in the hospital. And that time was the first time in probably three or so years. I mention this because maybe, just maybe, my own tummy problems weren't all alcohol related.)

And now, I'm getting this sense of "Well, if I did it yesterday, why not do it on Thursday? Why not have all my favorite foods at Thanksgiving?" I'm reminding myself that I ate crackers because I was sick, but I still have that thought going through my head.

Looking for healthy vegetable recipes.

I'm trying to incorporate more veggies into my diet. I'm looking for recipes that are fairly healthy, somewhat low-ish in calories, gluten-free, and sugar-free. Jeremy also cannot have raw tomatoes, nor does he like them cooked if he can see tomato chunks (so, for instance, tomato sauce is usually fine), nor does he like things to have an overwhelming tomato-y taste (while sauce is fine, because it's usually just part of something, he doesn't like tomato soup).

Given those restrictions, what is your favorite healthy veggie recipe?
